The recommended PSU for a 6970 is 550W. Therfore 650W would leave a decent amount of headroom and would be what I would recommend if you want to stick with a single card. If you think you might get a second card in the future and/or want a lot of headroom, get a 750W unit. No need for 900W or anything silly. If you don't believe me, head over to the PSU section of the site and ask someone.

As for XFX, as I see it they make great products but leave a lot to be desired with their customer support/RMA service. The brand of the graphics card is basically up to you though.

Not all P67 boards support SLI as well as CrossFire, but a lot of them do. Perhaps you should consider the Gigabyte GA-P67A-UD4 along with a GTX 570 like Korlus said.
