The heat spreader still retains heat, thus; more even contact with the water block will help remove that heat. The extra milligram of paste is negligible.

On the core I7 processors it is best to use a vertical line. about 1mm thick and stop about 4-5mm from each edge. You can have a look at the doc here as well from Artic: link
