You could dual boot if you only use windows for 2 programs.

The thing is that I use them all the time. I cant even turn on my xbox unless Aver MediaCenter is running...

I'm sorry to say that the only video editors that are equivalent to Sony Vegas are extremely expensive and are only feasible if you were a business.

Sadly video editing is currently sub-par on Linux.

I second the vote for dual boot, preferably 2 separate hard drives. As far as the monitors go you can always toss in a cheap second video card for the 3rd monitor.
