I tried running without the bridge but I don't get that option in nvidia control panel to 'SLI'

GPU-z recognizes both cards, and I have folded on both of them, but no option to enable SLI in the control panel.

This was the case with the latest WHQL and the drivers i'm running, which are the 260.99's (I prefer them, because i get better results in benchies)
