I went with the 560 because it outperformed the 6950 and sometimes even the 6970 in the games that I will be playing.
Basically, Just look at some benchmarks for the games that you will be playing and see for yourself.

OP: 6950 2GB can be had for $260~, which is the best deal as of right now.

Here is an article which shows the overclocking capability of the two cards side by side (with the 1GB edition, which can't be unlocked): http://www.legitreviews.com/article/1533/

The really interesting thing to note is that, in most of the benchmarks, the 6950 1GB outperformed the 6950 2GB. Perhaps this was because they weren't using Eyefinity or 2560+ resolution?

In any event, the 560 is capable of some pretty crazy overclocks. In that review, they were able to achieve 960Mhz core (823Mhz stock) and 1175Mhz memory (1000Mhz stock) completely stable. Other cards have done over 1Ghz core, and that's on the reference cooler! Imagine that sucker on water!

However, despite the 6950's much more modest overclock of 40Mhz to 840Mhz core, it still outperformed the overclocked 560 (although they only give the single AvP benchmark and Vantage synthetic for comparison).

My humble opinion? If you absolutely must decide between the 1GB 6950 and the 560, go with the 560. That's only if you don't use multi-monitor or a 2560 resolution monitor.

However, I'd highly recommend spending the extra $20-$30 and get the 2GB 6950, which can be unlocked to a 6970. This option will easily beat the 560, and even beat the 570 in some games (a $350 card). The only card that truly stomps the 6970 is the 580, which is over $200 more expensive.
