In all honesty, if it can run with one card (with CrossFireX disabled), I'd leave it at that. It's a console port, so I doubt the game would utilize such things.

This still doesn't answer his question. It is still only using one of his GPU's (a 5870 can surely max out Dead Space on max with FPS to spare).......
Make sure that you installed the latest CAP's as they fix a lot of Crossfire problems.

Honestly that sounds like some weird driver error of sorts. I can absolutely max the game out at 1920x1200 with just my 4890.
