750w is more than enough for two 570's and yes, it's a good Seasonic based PSU.

The AX has a little higher efficiency, but otherwise the two are very close in performance, you'd be perfectly fine with either the XFX or the Corsair. If you plan on keeping the PSU for a long time, then the Corsair wins out on having the longer warranty, and that's about it.

They're extremely close in performance, the huge price difference isn't worth it. So yes I'd recommend it over the AX.
