2600K overclocks much better and if you have a choice between SB and 1366 definitely go with SB. It's not worth the upgrade if you're coming from 1366 but if you have a choice the answer is clear. Just keep in mind you'll have to get the motherboard replaced in a couple weeks because of Intel's recent screw up.

Keep your i7 950 and wait for ivy bridge, its not really worth the money for a 2600k

If you are building a new computer, get the new 2600K instead of the 950. However, just know that the SATA 3Gbps ports are faulty on the current motherboards for the 2600K.

do people read the op or nah?

...go for sandy bridge in about a month or two

EDIT: as for watercooling, unless you wanna do a custom loop, go for the xspc rasa 750 rx360 kit.
afaik the 880i is a bit older and doesn't come accommodate for 1155/1156.. maybe someone else can shed some light on this?

either way, a decent air cooler will let you go to 4.5-5, so with decent wc setup you'll have no problem.

rasa kit or custom loop to hold 5ghz oc. corsair h70 or similar will not handle it 24/7.
