It should be just fine, as you said, it's not for surround vision, so you'd only need a card good enough to power one or two monitors on the resolution your desktop uses.
If you'll be gaming on your main monitor, I'd leave that in the 480 and run the extra two on the second card, to take the strain off the 480, otherwise two through the 480 and the third through the little GT210.
I did however heard of a few flickering problems when running GT210's on dual Monitors (usually the DVI out one), I dunno if that was rare or what.
If you've got the 210 laying around, give it a shot, otherwise a cheap 240/430 or would be great for temps and just to be on the safe side.
