This isn't really that true, just dont' need the onboard because of the video card, but it doesn't hurt performance.

What if I went with Gigabyte 870A-UD3 Motherboard and AMD Phenom II X4 965 Black Edition Quad Core Processor HDZ965FBGIBOX?? It says that mobo is 8 channel can I still just use 2 sticks of ram at 8gigs ddr3?

i think your mixed up

8ch audio is 7.1 (7 full range + 1 sub)

dual channel is for the ram (only will be dual chanel with 2 or 4 dimms)
