I would suggest against that an just buy a new motherboard, there are plenty of inexpensive motherboard that support crossfire. You're going to suffer some serious bottlenecking I'm pretty sure. Especially running crossfire. If it will even work at all because your board wouldn't have crossfire support.
AMD motherboards are wonderfully cheap. I highly recommend you just upgrade your motherboard. The hassle of figuring out how to safely mount your GPU on that riser won't be worth the performance gain. At x1 that's going to be horrible scaling and I doubt you can even crossfire them; how would you even connect the crossfire bridge? Even if you get past the crossfire bridge connection, I doubt crossfire would work in that setup.
I'll be taking my rig apart to RMA my Gigabyte 6850 as it's been giving me some issues/fails miserably at slight over-clocking and I get awesome deals at a local stores for cheap cheap fans, PCI cards and anything pretty much. I hadn't really considered the x1-->x16 deal but I sort of stumbled upon that little PCI. It has me wondering since.

The F*@# if I know. I buy combinations of items on NewEgg and I think I got $25 off with that mobo + processor ( I think ). My whole rig was $583 after $75 off in combos and dealios in general.

Now, step 2: My psu is a 650w, probably 520-540w continuous. Do I need a 750w? What's a good, reliable and most of all sized for mid-tower PSU? Something not expensive. Plox.
I assume you'll definitely want modular. By "not expensive" what exactly do you mean? You'll need to spend a little over $100 for a decent 750W modular PSU.

ati/amd cards need the bridge for xfire to work. i think your talking about nvidia gpu's.
Alright, I can get refunds for my somewhat-faulty video card, psu and motherboard. I have the 6850OC which is an expensive 194.99 compared to the $174.99 775/1000. I'll be purchasing two of those (349.99-$20 mail in rebate), a Gigabyte motherboard (or whichever good brand is the cheapest) with 2x 2.0 pci-e x16 slots and a new PSU that can run everything without crashing. What do you guys suggest? I need to spend the LEAST amount of money possible.
Open to all plausible suggestions and thanks for the input

I'm open to GTX460 Sli as well as the EVGA ones could be a cheaper option.
I'm just getting the refund for my 6850 and upgrading to a 6950. My PSU is enough for that card and flashing it to a 6970 would be enough for Battlefield 3 and the Crysis series.
