They mean metering via the camera's built-in light meter, in any shooting mode. If you do a partial press on the shutter release, or hit the AF button, or the DOF preview button, the camera will meter. What info it gives you depends on the mode. If you're in Av, you set the aperture manually and the camera sets the shutter speed (and ISO if you have it set to auto) by metering the scene. The exposure level is indicated by the ruler in the VF.
Or, most likely in Marin's case, metering is be done with a separate, stand alone light meter, like a Sekonic.
