Sorry for the rather late reply. Things have been insane around here lately.
The following is me assuming that you mean you want to mod a skin that shows only 2 cores, and has no variants for more. If it's from a skin suite like illustro or Gnometer, though, there might be a variant for your number of cores.
Anyways, to add the last few cores, you should start off by adding more measures for the cores you want to show up. If you'll be building off a skin that already shows 2 cores, then I'm pretty sure they'd have one measure each that you can copy off of. Here's the measures for four cores in the Gnometer system skin for example:
Each measure points to CPU, but adding a Processor parameter specifies which core to monitor. Other variants of this skin are coded the same way for 6 cores and onwards.
After setting up your own measures, it's just a matter of making copies the Meters for the first two cores, and then adjusting stuff like label text, which Measure they use, their X and Y position, etc. I can't really quite elaborate how, since skins are all coded different. But if you post the code for the skin you're modding, I'll be happy to help a little more there.
