If you go with three GTX 480s or three GTX 580s, then not even the almighty SeaSonic X-750 would be able to power that kind of a system. It would work for basic web browsing and whatnot, but it would probably turn off under any 3D load. Instead, I think that a high-quality 850W is perhaps the minimum. And then for four GTX 480s or 580s, we're looking at perhaps a 1200W.
However, in order to justify the cost of a PSU that can handle it, I would say that you'd have to be absolutely, positively 100% sure about the specific graphics card upgrade. I've seen way too many people on here get a PSU with a massive capacity because they "might" get a more-powerful graphics card only to see them with the same graphics card(s) over a year later.
