You'll have lots of problems in scalling, performance and frustration ...
Don't spend your money on the 2nd GTX295.
It's better to keep your GTX295 for a couple of months until you got enough money to step up to newer cards.
Yes, GTX295 is an awesome card, i loved mine and i used it for 2 years. But i must admint, GTX580 gives you a smoother gaming experience, less power and heat ... and well... if you had a second GTX580 it will crush the 295 Quad Sli.
So, for summary, i was on your position. I had a GTX295 with EK waterblock. I thought about a Quad SLI ... had the luck of a friend borrowing his GTX295 for testing.
After a week in test, i decided to sell my card and get a 580 ...
And if you want to max out games in terms of AA ... VRAM will have a tremendous impact in performance...
