It can handle 2 6970s fine so why would it struggle with this?..

First version was a 2GB version, 1GB per core.

How bad is the 6950 1GB vs 2GB at 1600p? Not much difference, only in multi-monitor situations but those are the type of people these cards are aimed at so you'd be right. I guess those who will be running eyefinity will grab the 2GB, and those on single screens go for the 1GB.
