I Would go for a pair of Gainward Golden sample GLH 570s or Evga superclocked editions.
The price difference between the 580 and 570 is stupidly high. 580s will come down in price also when the 6990 comes out.
580 great card, but overpriced.

Let me just chime in and put it like this:
It's not optimized to use more than 2 GPUs and this statement still holds true until now. With SLI and CrossFire scale extremely well with this generation and quad is just not worth it, GTX 580 SLI is the most optimized and fastest you could get for the money right now. Even if the HD6990 and GTX 590 come out, who would say it will beat a pair of GTX 580?
Some might say save the money and get GTX 570 SLI then OC the crap out of it to get to GTX 580 level, well it's still true somehow but they might forget that at 2560x1600 you need a lot of VRAM to turn on all the eye candy and obviously the VRAM on the GTX 570 simply won't cut it. Even a pair of HD6970 will come close to GTX 580 SLI in performance when getting to ultra resolution, but since AMD is out of the picture, your choice is pretty much the GTX 580 SLI. For most people a single GTX 580 is powerful enough to handle gaming at 2560x1600 but for hardcore gamer which I assume you are, and if budget is not a problem, why not a pair of GTX 580 SLI? That's the price you pay for the fastest single card on the planet, wouldn't you say why Mercedes or BMW is so expensive?
As mentioned earlier I'm in the same exact situation and my 2 GTX 580 are on the way at the time I speak of, just need to get the rest of the components and I can enjoy gaming at 2560x1600 without a single hiccup.

Manual overclock along with custom cooler is out of question since I don't have enough space to fit 2x tri-slots VGA. As for V-RAM while I reckon you are right saying more RAM will help at a very high res, I just wonder would the 1.5 GB of the 580 cut it against the 1.28 GB of the 570? My original dilemma was due to the fact that, according to benchmark there isn't much difference between a single 570 and a single 580, and I was wondering if in SLI configuration the difference is bigger therefor worth the investment.

Also, even though budget isn't a problem but nonetheless if I could pay less it wouldn't hurt, would it be worth waiting for the 595/6990 to hit the market and hope for a price drop in the 580? Or would it take too long and it would drop too little to be worth it?

I'm guessing you aren't willing to watercool? Also 570s will explode (lol) if you overclock them. So yes Id say stick with the 580s

Not overpriced at all, it is and will be the fastest single card solution until the next generation of 28nm cards come out. Look at the prices of the GTX480s, they didn't come down until the GTX580 almost came out.

The price of performance is not a linear one, the GTX580 in terms of the market as a whole is priced just fine.

Oh dang. I can't wait for Kepler. I'm buying the 680 and that's it. Devs have stopped releasing Crysis and metro2033 type games. And by then nvidia will use 1.7-2gb. 680 @ 28nm and a WC block will be insane. 8AA on everything atleast and 60fps the minimum.

The VRAM on the GTX 580 will definitely help compare to the lower VRAM on the GTX 570 at high resolution, especially when you game with eye candy. A member at eVGA forum has 3xGTX 580 3GB in Tri-SLI and he said when playing Metro at 7680x1600, the game eats more than 2.5GB VRAM on the video card so go figure. I don't really expect a breakthrough in performance vs the 570 SLI but if you're asking if the VRAM will come in handy, it definitely would.
Whether or not it's worth the investment also depend on how you look at it, if you don't expect to play demanding games at max settings like Crysis, Metro, STALKER...and such then a GTX 570 SLI setup still suffice, rather than that you can enjoy almost all games with decent framerate at max settings. As I said most people game at 2560x1600 satisfy with a single GTX 580 so I don't see why a GTX 570 SLI is not enough for you. But if you want the best of the best without worrying about performance then well you know what to get.
As for the price drop I can't really tell, maybe it will maybe it won't, those dual GPUs cards are just around the corner anyway so it doesn't hurt to wait....only if you can wait lol.

i would say 580 and water cool it. then if frames rates not to what u like try 580 sli. I did not like my 480 in sli not improvements in the games i play. I got evga so i sent it in to get 580 back. The mcw80 is the watercooling block im going to use on the 580. the extar ram in the 580 will do you better. Also 2 580 in sli the top card will get very hot. i would say get one then it you like it get sli. but sli was a mood point for me.
