So I've been wondering what to upgrade... Looking at my sig rig, what would I take most advantage of? A new i5 2500k + mobo or a gtx560/70? If your opinion is to upgrade the cpu+mobo I have to wait around a month to buy it, but the gpu upgrade can be done right now.

I think that, because my e7400 is currently at 4ghz, the best choice is to buy the gpu as the gts250 kinda sucks...
Seeing as you already have DDR3 memory you should do a mobo + CPU upgrade. But first get the Graphics card, if you cannot afford everything now.

You could also search for used Q9550/9650. And if you get a very good price that could also be an option.

SSD's are very important... Everything is soo much faster...

If you use your pc mostly for gaming, then GPU upgrade.

If you us it mostly for browsing, word, music, etc stuff like that then I'd get an SSD.

If you're doing any kind of photo or video work on it, then new CPU+MB.

But that's just me...
Finally...

either way you are going to get an increase in performance personally i would go for the cpu+mobo and get the gpu at your next oportunity! thats what i did and upgrading cpu an mobo has made an amazing difference to my gaming... even with my pile of a gpu!

however you would get a better increase from upgrading the gpu first its a doule edged sword, except you cant loose

Have you considered upgrading to a quad-core? I know, LGA775 quads are pretty expensive, given that they are slowly no longer being manufactured, but I think you can still keep your platform for a while.

Though, a GPU upgrade isn't a bad idea either.
