Id suggest a NH-D14 for top of the line air cooling, much better than the A70. Youll get some ridiculous overclocks.

Have you considered putting it under water?

Barely but I think that's WAAAAAAY out of my league. This will be the first PC I've put together completely on my own. As well as my first dabble with OC'ing. So I don't want to add another variable into this mess

I have to agree...if you're going to be doing ALOT of video editing, the 16GB is a must. I also do quite a bit of home movie editing and that is one thing I regret...More Ram Please!!! The 2500k @ 4.5ghz encodes 6gb in just under 2 minutes, so I would stick with that and spend the extra $100 on an SSD (This C300 SSD would suffice) as a boot drive

Is the RAM half decent? Or is it pretty crappy? Also I was considering that Corsair case but wasn't sure about the cable management. Definitely going to pick it up now that I know it's decent for cable management.

I've actually downgraded the board to the P8P67 Pro. Hopefully I'll love it as much as you love your Maximus IV!

The Pro is a very good balance of price and features, I think it will work well for you. For the case check out the Silverstone Raven RV03 it runs about $140-160 and will work wonders for an aircooling case, just make sure to stick to the reference design GPu like you have, as some configurations of heatpipes will not work well in it.

has the RV03 for $146 but shipping in 2-4 weeks, and http://www.frozencpu.com/products/12909/cst-1096/Silverstone_RAVEN_RV03_Full_Tower_Case_w_Window_SST-RV03B-W.html has it for $140 with about $25 shipping for me.

Ah yes, missed that.. hopefully you will though! Perhaps it's because I was with MSI for the last two serious builds, but an Asus just feels better and more capable.
