If crossfireX were to offere better preformance in somecases than SLI, and the reason its not supported yet is that people are only starting to move to it, then I suppose i'd use crossfire since it won't be until summer that i'd get the second graphics card.
My last question is whether if I get the 69502GB flashed to the 6970 will that be able to run say Skyrim (next elder scrolls game) or a similar RPG game at max res/settings without lag?
Considering Skyrim I think is going to be heavily Console Ported, You should be fine, 6950 2GB flashed to the 6970 performs extremely well, Should be able to max almost all of the games on the Market, Crossfire is overkill in my opinion at this moment.

CFx use to be poorer, but the 6000 series caught up for now, unless you want raw performance and have a huge wallet 6950 2GB is the way to go, at 250$, more then half the price of a 580, only performs about 10%-15% under.

50% less for 10-15% less performance? Ha? Tuff choice eh?

There are many threads in the OCN ATI section on how to do so....It is not that hard to do and with the dual bios switch, if you screw it up you can always revert back to the original bios...
