First build for gaming, need advice

Hey guys, I've decided to build a PC that will mainly be used for gaming, most likely in 5760x1200 (eyefinity setup). I'll also be running 3DS Max a lot and would like be to able to play any new games on the highest detail. My budget is around $2500-3000, this is what I've come up with so far:

Motherboard: ASUS Maximus IV Extreme
CPU: Intel Core i7 2600k
RAM: Corsair Dominator GT 8GB
Graphics Card: Radeon HD 6990
Sound Card: Creative Labs SoundBlaster X-FI Titanium
Hard Drive:Intel X25-M Solid State Hard Drive 80 GB + Western Digital Caviar Black 1TB
Case: Cooler Master HAF X
Power Supply: Corsair AX1200
CPU Cooling: Corsair H70

The main component I'm not sure about is the graphics card, and whether I should go with the 6990 or possibly an nVidia card. I'm also not sure about what to use for a cooling system, as I'll probably want to be overclocking the CPU and GPU.

Thanks

EDIT Changed RAM and added CPU cooling

That's a very nice build.
One suggestion,
Replace the WD Caviar Black and get the Samsung F3.

One good reason I will give is that you don't need that since you already have an SSD. The F3's never fail to impress. Just a opinion though. You can always save few dollars and make use of it for future use. You'll maybe need extra fans for the case and oh yeah! Get a nice cooler like a Noctua or a Cooler Master Hyper 212+.

Hope it helped.

EDIT

No need for a 1200 Power Supply. Just get a 850w its more than enough.

I agree that if you not going to use the wd-black for your OS, the f3 is a good cheaper option. I would get a bigger ssd if possible , as my 120 filled up fast!
I am happy with my H-70,my temps are good. I would go two 580,s or wait for the 590 with your budget ( but thats just my opinion)
PS. i love my HAF-X

+1 save some money from the WD Caviar black then get a Samsung F3 and higher capacity SSD. That's it. Also remember as I said you don't need that power supply get a 850 instead. But if you plan on getting another 6990 then its okay but I don't think you'll spend on another. Just wondering.

Thanks for the advice, I'll have a look into the Samsung F3.

On another note, I'm thinking I'll go with Corsair Dominator GT or Vengeance instead of the XMS3 RAM. The Corsair H70 CPU cooler sounds like a great option, I'd love to have a proper liquid cooling system but I've never built a PC before and it sounds a bit complicated.
