I guess you could justify it if you're trying to push a 120hz monitor with everything turned up, but otherwise anything over 60fps isn't really benefiting you. Personally, as long as it's not dipping into the 20s, I'd consider a game perfectly playable.
And really, VRAM aside, there are only a handful
of titles that can even push a single 580 or 6970 that hard at 1920x1080.
For someone with a standard 60Hz HD screen... it seems kind of crazy to dump $700-1k on a gpu setup just to play on a cheap 1080p monitor.
