Right now, go with the 2500k. If you can wait for bulldozer though, do it. I think the 8 core BD will destroy even my 2600k without even noticing.

8 Real Cores @ 5GHz+ > 8 Threads @ 5GHz (Assuming that BD WILL be able to OC past 5, which is pretty certain)

AMD FX series (Bulldozer) will have a rating of 4Ghz stock on all cores (via turbo boost) at the very least. Smaller amounts of cores having turbo core will exceed this - and you could overclock all cores to these values that the fewer cores would turbo to and further I'm sure.
