They were about the same price on Amazon (5 dollars), and for a while these wil be music only. I figured, "what the hay?"

I was going to mod them as much as i could, as soon as I get them Im going to do the felt removal mod and try to get my hands on some dynamat.

If you're open to other choices, the AD700s would work well for the music you listen to + Gaming, but you won't want to wear these outside.

All of the choices you stated will leak and you won't want to wear them outside.

Alternatively you could go for IEMs rather than headphones. That'll give you sound isolation and good listening for the music genres you stated, but many get annoyed with having to have IEMs in their ears for hours.
This may sound odd, but how bad is the sound leak?
Assuming I listen at a reasonable volume, would it be obnoxious to wear open backs on the train or at I don't know.....a coffee shop I suppose?

Open backs are not for outside use. It leaks all sound in from the outside and can very well leak most of the sound that you hear out. IMO having open back outside ruins the listening experience.

This.
I got to listen to some Grados (SR60i), and the only way those things can leak more is if the drivers pointed to the outside. They are GREAT for home listening, but if someones mowing the lawn outside, your boned until they stop.

I'm not so much concerned about outside noise as I am noise coming from the headphones and bothering people. How bad is that? I mean I would wear them like I said on trains, planes, maybe to lunch, but I would primary use them hooked up to my computer or iPod at home. I would say 75% used at home and 25% elsewhere.

While I consider the AX 700, you couldn't wear those anywhere, they are MASSIVE.

I know you will probably tell me to look into closed cans, but I don't like the soundstage nearly as much. so I am at a loss.

If you listen to music at a normal level that won't destroy your ear drums, the sound leak is very low. If you listen to the music on MAX volume, you can pretty much listen to your music without wearing them.

I am now looking at the grado sr80i, the Sennhesiser HD280 Pro and the Sony V6.

How do they compare?

Careful with Senn 2xx series - a lot of complaints that they squeeze your head, but some think they're fine.
Sony V6 seems good for the $$ - good enough for Sony to reinstate them after discontinuing and providing the V600 instead (didn't sound as good).
Dunno about the Grados.

EDIT: @ next post -- I have tried the 2xx series. Not the Sony phones, though. The Senns squeezed my brain out through my nose...sounded fine, though.

This was more ore less for people who have tried them.

I was wondering how the Sennhessiers and Sony's compared to the GRado's sound wise
