Vegas, After Effects, Photoshop and Lightroom all use hyperthreading. Well to give you an estimation of the improvements you'll get with HT, I timed video creation on my CPU with both HT on and off (keep in mind that the i5 2500k's performance is basically identical to an i7 2600k with HT off).

Improvements with HT on and off;
Sony Vegas: ~25% (75s (HT off) vs 60s (HT on))
After Effects: ~20% (18s (HT off) vs 15s (HT on))
Adobe Photoshop: ~40% (99s (HT off) vs 70s (HT on))

I don't have Lightroom... the timing is done with a watch so they're not terribly accurate but they should give you a good idea.

Its about a 10% performance difference one way or the other depending on the program.

I get a 75% boost in the programs that i use which take advantage of hyper threading, its not just a small 10% performance boost if you have good software.

@OP
If you are serious in video rendering then get the i7, Along with good software it will make a massive difference. However, if your just putting together and trimming a few clips to render a simple video, just go with the i5 as render times wouldn't be to long anyway.

I Personally use Blender, and got a 15 second animation the render time was about 6 hours on the i7, with hyper threading off, it would have been 10+. But that is extremely heavy and complex processing in a 3D world.

Some Mac models have i7 CPUs in them... So I wouldn't know why OS X wouldn't support it.
