So I actually CAN use 3TB drives for storage?
Yes you can use 3TB drives as storage as long as the OS supports GPT. Newer versions of Windows (i.e. Vista and 7) plus newer Linux distros support GPT. Older OS like XP 32-bit do not support GPT.

GPT (GUID Partition Table) allow drives/arrays larger than 2TB to be used. The older standard, MBR (Master Boot Record) only allows 2TB drives/arrays and less to be used. (Also GPT allows a lot of primary partitions to be made, where as MBR only allows 4 primary partitions.)

If you try to use a 3TB drive in MBR mode, you can only use a maximum of a 2TB partition. The other remaining TB is unusable.

BIOS can only boot drives/arrays at 2TB or less. UEFI can boot drives/arrays greater than 2TB.

I thought I might aswell just get the 3TB instead of getting a 2TB and then messing with it again in the future.

So my board can't use 3TB drives?
I bought two 3TB from Newegg that arrived last week. It was cheaper than buying three 2TB because I took advantage of a weekend special promo.

Ran both these drives through Hitachi's Drive Fitness Test, just to make sure they're not DOA, overnight and they came out fine.

This is the fastest 7200rpm drive out atm, that is, until Samsung releases their 4TB (1TB platter) drives.
Shhhhh!
