i'm planning to do sli with dual gtx 570 and some oc'ing on intel 2600k. will this psu good enoughf for the task?

Huntkey X7 is very good.

Option 1, i wouldnt go for that it has max rating of 18A on the 12V+ rails.

Option 2,3 have 25A 12V+ rails which is better

Option 2, will do the job but you will be using all of your 12V+ rails to do it, no there will be no future adding more graphics cards.

Option 3, probably your best bet its a high power supply so your going to see better efficeny. And you will be able too add another graphics card in future of you want.

Individual current ratings do not matter. And the Huntkey X7 is the best unit listed.

if using huntkey, can i use only the blue-colored pcie pin only to power both gtx 570, leaving the red one unattached?

I would put two on the red and two on the blue.

Why wouldnt they matter? if i bough this power supply for my overclock gtx 480's i would be pulling around 280W on a card *tested in furmark*.

280W / 12V = 23A <---if i was drawing 23A on a single 12V+ Rail thats rated for only 18A what do you think would happen?

OCP isn't set at 18A, it's probably like 22-25A. Assuming it actually has +12V OCP. And he isn't using GTX480s, he's using GTX570s. Big difference.

570's draw 213W full load , in documented tests

213W / 12V= 17.75A

The rails on that power supply are 18A rated, OCP is latched to the rated current.

2.3.3 Over Current Protection (OCP)
Overload currents are applied to each tested output rail. If the current
limits are exceeded, the power supply shall shutdown and latch off.

Cutting it close, but i guess he wont get full load much.
Load balancing accross the rails will help, but if both cards did hit max it would still be close if he uses that blue cable connected to both cards.
