That PSU only has a single 12v rail @ 82a. That could be your problem right there.

GTX 580 uses 42 amps per rail. Add another card, and you're already at 84 amps.

A lot of people always make this mistake, or find out that their current 1200 watt PSU can't handle it. You need to keep an eye on your 12v rail amps whenever you purchase a PSU and even more so when you go SLi.

Could be 'internet lag' if your playing multiplayer online (which i assume you are).

580 sli or not, bad internet connection will give you bad multiplayer gameplay - depending on the quality of server your playing on also.
