Which temps do I trust? (List included)

So Im trying to find out which temperatures are really important and how close my temperature probe is to the correct temperature as depending on load and extra cores it seems to vary. What do you guys think?

Phenom II 555 X3 (third core unlocked) IDLE OC 4ghz
HW Monitor CPU Temp(not core): 34 C
Everest CPU Temp (not core): 34 C
Case probe (stuck in heatsink as close to chip as possible) : 29.3C

Phenom II 555 X3 (third core unlcoked) FULL LOAD
HW Monitor CPU Temp(not core): 44 C
Everest CPU Temp (not core): 44 C
Case probe (stuck in heatsink as close to chip as possible) : 33.4C

Phenom II 555 X2 OC 4ghz IDLE
HW Monitor CPU Temp(not core): 34 C
HW Monitor Core Temps: 22 C
Everest CPU Temp (not core): 34 c
Everest Core Temps: 21 c, 21c
Core Temp (the program): 21 C
Case probe (stuck in heatsink as close to chip as possible) : 28.2 C

Phenom II 555 X2 OC 4ghz FULL LOAD
HW Monitor CPU Temp(not core): 39C
HW Monitor Core Temps: 27C
Everest CPU Temp (not core): 39c
Everest Core Temps: 26 c, 26c
Core Temp (the program): 27 C
Case probe (stuck in heatsink as close to chip as possible) : 30.2C

I have Phenom II 945 with exactly the same reading problems, the core temps are about 10C lower than the CPU and i don't know what are my corect temperatures. I'm using Zerotherm FZ120 to cool my cpu.

I can't believe that my CPU is 35-40C in idle and Cores are ~22C with this cooler. It's not stock cooler so i guess the CPU Core temp is real over the CPU overall?
