How is my system looking I'm planning on building?

Hi, First of all, my budget is $2000 AUD (not including monitor, mouse or keyboard). What I'm aiming to build is a fast, responsive desktop for gaming, photo and some video editing. I want to water cool it so that I can overclock, it's quieter and I simply love the awesomeness of it. I don't care if I don't have amazing temps as long as it is [I]better[I] than air cooled and it's quiet.

I'm pretty happy with what I have down on paper but there is one thing that has been bothering me for a long time...AMD or Intel? I know, I'm sick of this question too.
I'm looking at the AMD Phenom II x6 1055T and Intel i5 2400
Basically tho, if I get the AMD it's cheaper, more cores, higher clock speed and more overclocking room.
But intel is still faster, especially in single threaded applications, better tempretures? and I believe the Turbo boost is better?
Usually I would go for intel straight away but I was planning on overclocking the RAM which would not be possible on Sandy Bridge because the RAM is limited to 1.5v. That means if I get the Kingston HyperX 1.65v 1600MHz RAM it will under volt and clock to 1.5v and 1333MHz.
So what would you do?

And any other suggestions? Here is what ive come up with so far:
Case: CoolerMaster HafX
CPU: AMD Phenom II x6 1055T or Intel i5 2400
GPU: Radeon HD6870
SSD: x2 OCZ Vertex 2 60GB (in RAID 0)
HDD: x2 Western Digital Caviar Blue 500GB (in RAID 0)
RAM: Kingston HyperX 1600MHz 1.65v 8-8-8-24
PSU: XFX Pro 850W 80+
MB: Asus M4A88TD-M EVO (AMD) (not sure what I would get for Intel)
$1621

Cooling:
CPU WB: CPU-350AT
GPU WB: VID-AR687
Pump: EK-DCP 12v
Radiator: Black Ice GT 280
Res: 160mm Liquid Fusion V
Fans: x3 Antec Big Boy 200mm (top of case, 1 outtake and other blowing cold air from top onto radiator), x2 Noctua 140mm (pushing on radiator) and a Thermaltake 230mm (Front intake)
$571

Total: $ 2192aud (over my budget)

I'm happy with the case I chose because I want the radiator to be inside my case so that its all neat and tidy. I definitely want the SSDs (at least 1, I have one in my laptop atm and I love it). I like the RAM I chose because its a good overclocker and the heatsinks look amazing.
I'm just wondering if I should maybe get a cheap, crapish processor for now and get a more expensive motherboard, then upgrade the cpu in a year or so. Because I always see people with $300 MBs but from what I can tell, the MB I have chosen has everything I want/need (RAID, USB 3.0, Overclocking options etc)

Types of games I play: Black Ops, Battlefield, Mafia II, GTA IV, Dirt 2. I do photoshop editing and like I said some video editing with Adobe After Effects.

EDIT: Also, I chose to go with OCZ for my SSD because a, it was a cheap option and b, OCZ is the only brand of SSD that TRIM is enabled in RAID 0.

hmmm. I was thinking about doing that, and I might do it but I sort of have an obsession with WC lol. You do have a point tho because that way I can spread the work load, I don't want this to be a 2 day project.

Unless I go with 1 SSD, i5-2500 and WC?

But that still doesn't quite answer my question because I don't want the Intel CPU to slow down the RAM, although if I can get RAM thats @ 1600MHz and fairly low latency I guess that would be fine

mmm sounds nice, not sure what the speed difference would be lol
1 ssd v 2 ssd's ect...

btw if u go watercooling, drop those antec and tt fans and get some nice 120mm fans + rad or 2

but yeah if you get 1 ssd, youll have to reinstall windows ( pretty sure ) to upgrade to 2 ssd's if you want to later on.

watercooling would easly get you over 4.5ghz on a 2600k ( get a K. and overclock it a bit ) otherwise just go with air cooling and 2500

definitely go intel.. and not from a "fanboy" point of view.

you can fit in a 2500k or 2600k with wc, ssd and whatever else you wanted in your $2000 budget.

i see you're into wc, but unless you didn't want to build your own custom loop, definitely go for the xspc rasa kit and save a good $300+ there.

i'd get spinpoints instead of the caviar blues, but entirely up to you. change the power supply and maybe even the case. while the haf x is a great case (both for air and wc)... straight out, i think you'll get over it. i can't wait to get rid of my 932 and go for something more suited to wc and aesthetically pleasing.. looking at the tj11.

just a couple of suggestions.. also, where are you buying from?

EDIT: sorry for being brief; time is of the essence right now and internet's capped.. i'll help you out later on tonight (1am sydney time) unless others have beaten me to it. take care

The radiator I was going to get was a dual 140mm rad tho, so I think I need 140mm rads on it.
Thats ok if I need to reinstall W7, don't really mind.
I don't really care if I am able to overclock heaps on the CPU because from experience the GPU is what bottlenecks me. So I would be happy if I can overclock just a bit on a 2400 or 2500.

I don't quite see how I can fit a 2500k in my budget unless I get a much cheaper case. Have you got any suggestions for another case? I would like to have the rad inside the case tho for neatness. I was also looking at the NZXT Phantom, could fit a dual 120mm up top.
Most of the hardware I'm buying from pccasegear: http://pccasegear.com/
and watercooling: http://www.koolance.com/default.php
http://www.frozencpu.com/

and the res from here: http://www.frozenqpcmods.com/

oh and not sure if I understood correctly but I do want to build a custom loop

Thanks, I'm going on camp tomorrow for school not looking forward to excreting waste in sand holes. I'll take my phone so I might be able to take a look at how the thread is going but if not I'll be back on Friday.

Do you have any suggestions on a motherboard?
