Is it possible? Of course! Is it easy? No, not really.

To answer your original question, 2 120mm rads will not be enough for your rig. I run two 120s with a i7 860 (3.8Ghz, 1.33V) and a 5850 at stock, and the temperatures are OK, but not amazing. And this is with a lower TDP than your system.

Price, performance or silence, pick any two. I went for price and silence, as such the performance isn't great but it is nice and quiet.

I like your plan to mod the 360 into the top of your case, although I would alter it a bit. I would get a decent rad now, they last forever and are a good investment, and then see if you can get it in. If you can, great, if not then mount it externally for now and start saving up for a new case. Or, depending on how handy you are, design and build a rad box to sit on top of your case. There are lots of possibilities, be creative!

Great fans, if you can get them. They just can't be beat for noise / performance in a 120mm fan. I might be tempted to go for the 1850's and a fan controller, it just gives you an extra performance boost when you want.

For slower fans the XSPC RX series or the Black Ice SR-1 are good. The Swiftech QP rads give some of the best bang for buck. Have a read of Skinnee's triple rad roundup for a comparison of a few popular rads.

From what I have seen the RASA RX 360 tends to be the best bang for your buck and they make good quality rads too. Which is part of the reason why I use it in mine.
