AVI is fine. I'd recommend AVI under h264.

.avi is fine. .mkv is usually used with HD videos. Make your videos like 800MB when you do converting.

Great! I think I'll just go the uncompressed route. Just acquired about 3tb of hdd space, so I would much rather them uncompressed. +rep for everyone for their help!

I use DVDFab HD Decrypter (the free version) and Auto Rip N Compress (WMC plugin) to make Video_TS folders and run them in WMC. It seems to be working very well so far and the quality appears to be very good, though I just started doing these a few days ago, so i don't have extensive experience yet.
