@ 1080p the most usage I've seen in real world usage on my 570 was 1084mb. And when I took a look at Afterburner after playing Metro it seems like it peaked there, cause it was a straight line across the board.

1.5 GB (per GPU) should be enough for single monitor use, but many people are complaining that it's a gig off the 6990.

Ah ok I figured that.
I'm debating about multimonitor for the wow-factor but bezel technology is still a bit lacking imo. After buying the GTX590 my funds a bit lacking as well for me to go multimonitor right away or anytime too soon, but perhaps once I start college if I have anything left over from my savings I'll see where the tech is.

Heaven maxed out uses 1 gig on my 570... (@2048 x 1152)

I think you would likely be ok all the way up to 1600p with something like 2AA. Multi-monitor may leave you wishing for that extra 0.5 gig per gpu... but it will depend on the game.
