My SB build.

I made the decision to build a new system and plan to OC it hard. I am hoping to be finished with it in two months and I am about to start ordering a few parts here and there. I'd like some opinions.

Case: Corsair Obsidian 800D
CPU: Intel Core i7-2600K
Mobo: GIGABYTE P67A-UD7-B3
PSU: CORSAIR Professional Series AX850
RAM: Corsair Dominator GT 4GB DD3 2000(I know it'll run at 1866 on SB, but I purchased it hastily when I was planning on going with a 1366 setup.)
Video Card: Nvidia GTX 590(maybe two 580s in SLI instead.)

Cooling: I am going to drop in the area of 600-800 on WC for a quality setup.

I'm assuming that this build is intended for gaming due to the 590. If that is the case, I would drop down from a 2600k to a 2500k. A 2500k can be overclocked to around 4.5-4.8GHz on air and will be more than adequate for gaming. Also, what res monitor are you intending to use. If you are using a 1920x1080, then you definitely don't need that much graphics power. You would be fine with 1 580. If you are looking for higher resolution, then I would either go a 590 or 2 hd6970s. The 6970s are about 400 less than 2 580s and actually perform better at high resolutions due to larger ram and better crossfire scaling at 2560x1600. As for the other components, great case and psu. You might want to jump up to 8 gb or ram though, just in case. I would take the money that you save on cpu and gpus and buy a solid state drive.

edit: oh about the watercooling, that is more than an adequate budget. Just make sure you get enough rad to provide enough cooling. I would say get a quad rad or 2 dual rads at least. 2 dual rads will fit in a 800d without modding or you could do a 360 and a 240 rad with a little modding.
