You should be able to use a GTX580, if it supplies enough Amps on it's 12V rail.

I wouldn't attempt it. That PSU has a +12V capacity of just 450W which makes it not much better than a 500W PSU. Additionally, their minimum power supply requirements to power a system with a single GTX 580 in it is a 600W peak-rated power supply. It looks like yours is a 550W peak-rated.
