2-GTX470 or a GTX580?

So which would be a better setup, 2 GTX470 or 1 GTX580? And if I have 2 GTX470's, what wattage PSU should I be looking at?

Two 470's will be faster, I would recommend a good quality 700+ watt PSU (Corsair, Silverstone, Antec, Seasonic, ect.) - depending on your resolution, and the rest of your system, the 580 would probably be more than enough for most games, and offer some future proofing (by being able to SLI 580's in the future). Games that don't take advantage (getting fewer) would also perform better on the single 580.

For a PSU, I'd get a 750W minimum.

As for 2x 470's, they definitely challenge the GTX 580 if not in some cases win. But, for the extra heat and noise that the 470's make, the GTX 580 is fantastic.

Especially the DirectCU II GTX 580. And there's a Gainward NGTX 580 Lightning out, as posted recently on OCN. Check that out too (simple google search will find all the info on that card).

So to put it plain and simple:

Stick with the GTX 470's, whack a 750W PSU in there, I'd recommend Corsair, XFX all the well known brands. And wait for Kepler.

Kepler, if you didn't know are the new 28nm graphics cards.... probably be waiting a good 6-18 months for one though.

Lets not confuse the guy, a single GTX 580 isn't a 100% viable option, it means he's got to sell his cards, and get a GTX 580, and he'd have to put money towards it.

Absolutely no point.

Wait for kepler, you won't notice that much of a difference!

although the GTX 580 is a nice card, granted.

I definitely agree. In his car analogy it would be more like two cars pulling a large object together as opposed to just one.

OP if you have the two 470s already then definitely keep them as you won't see an increase in performance (actually a decrease). Power supply wise I would go with any quality 750 watt. You don't need anything more than that at all.
