if you set them in SLI, only one monitor will receive full 3D acceleration.
furthermore, VRAM will be copied, so when you alt-tab to the other game, the OS have to switch out the VRAM of one game and put in the VRAM of the other game. that causes hitching lag and high RAM usage.

How does it work though? Are there special settings I need to do? Also how would I be able to make sure Game 1 shows on Monitor 1 and everything else shows on Monitor 2?

it's really simple. each card drive each display.
but if they're full screen games, you have some trouble because games usually only launch in the primary monitor. i think you should try to drag the game that is not in full screen mode into the 2nd monitor and leave it in windowed mode if it doesn't stay when u enable full screen mode again. windows is really bad at multi-monitor support. but yea
