Recommend me a PSU?

Setup:

Case: RV01 w/ 2 x 180mm intake fan, 1 x 120mm exhaust fan
Processor: i7-2600K (OC'd to 4.8-5.0Ghz)
GPU: GTX-570 (most likely be OC'd)
Motherboard: Asus P8P67 Pro
RAM: Corsair Vengeance 8GB
SSD: OCZ Vertex 3 120GB
WLAN: Linksys WMP600N
Cooling: Corsair H60

Future Additions:

HDD: Samsung 2TB 5400 RPM 32MB (x2)
Optical: LG WH10LS30
GPU: GTX-570 (for SLI)
Front Bay: A fan controller of sorts, maybe the NZXT Sentry LX
Fans: Replace all fans with Gentle Typhoons
Lighting: I might be using a few cold cathodes to better decorate the system, I haven't decided which direction to take my modding exactly.

A few things that are important to me:

Acoustics: I'm hoping for a quiet PSU, as the tower will be right next to me.
Efficiency: 80 Plus Gold Standard is what I'm aiming for.
Upgradeable: I would like to not be stuck if the next-gen GPU's consume significantly more power than the 570's, or if I want to add anything else in the future, so I assume using 70-80% of the PSU is optimal.
Reliability: I would prefer a PSU that wouldn't die on me, from a brand that stands behind their products.
Modular: Cleanliness is close to godliness

For all these intents and purposes, I was considering the AX1200 as it meets all the requirements, but was unsure as many on the forums claim it as overkill..which I don't necessarily mind, as it is also claimed to be the ultimate PSU in all aspects, notably efficiency.

EDIT: Forgot to mention that I most likely will also invest in a sound card, also added a tidbit about Modular-style PSU's, as I do prefer clean setups.

if you're going SLI get a corsair 750w or 850w. and get modular if you can afford it. makes things a lot cleaner.

I would definitely go for modular, editing the first post to reflect this. I have a feeling that with 750/850 I'd constantly be afraid of hitting the 100% wall by adding things in..and I'd never want to run at 100%, but more around 70-80.
You are correct. The PSU and motherboard are the two things not to skimp on.
Could a 850w handle what you want it to? Yes.
Would the AX1200 be overkill? Yes.
Would the AX1200 being overkill cause any issues? nope.

IMO it's always better to have too much PSU then too little. If your budget allows for the AX1200, and you are not skimping on other parts due to the cost of the AX1200 then I would go for it. However, if it's the difference between a lower rated, but usable high quality PSU and a better GPU then go for the GPU.

You may hit around 650w when benching furmark with sli 570s. So a 750w is enough headroom for OC for the current build with upgrades you are looking for. If you are really worried about about future power consumption feel free to scale my suggestions upward but I doubt we will see single gpu cards that pull much more than the 480/580 (SLI of those OC fine on a 850w)

Anyways the suggestions from highest to lowest budget:
Seasonic x750 or the Corsair AX750 (pretty much the same internals, Corsair has cheaper shipping)
XFX 750 (About on par with the HX750 yet a lot cheaper)
Antec True Power New 750 (Semi Modular, pretty good psu series)

Feel free to buy the AX1200 if you feel it suits your needs though

What of the AX850? very slightly more than the 750 but I think it might be worth that extra headroom for me?

I'd again want to run at around 80% the PSU's capability
