It's also an enthusiast site though, a lot of guys don't really care if it degrades because they will be replacing it within a year.
Myself, I got my 2500k pretty much for benching so saving the high mhz & high temps for good scores. I did some prime stable testing at 5Ghz with great temps & voltage that most would keep 24/7, but if using the machine for daily activities I run 4.5Ghz with way lower voltage & temps.

This doesn't realistically happen on air. I actually just went into the bios, put x50 in, and thought "what the hell, let's see what happens" and to my amazement everything worked fine, no freezes no bluscreens after some prime. Wasn't happy with the temps and voltages, though.

Supposedly, Ivy is going to work with 1155. If that's the case, then there's a good chance I will be replacing it within a year too. All depends on the feedback I read from those that switch to Ivy when it comes out. I use my rig for work, but I do consider myself an enthusiast as well. I need to find a good balance of the two. This recent build has made my workday a whole lot easier and I've had a lot of fun with it too. So, I won't mind upgrading at all.

From the reading I've done here, seems as though you 2500K guys are able to get to 5.0 a lot easier and at lower voltages. Is that because of the lack of HT only?

They're actually different chips. The 2600k has 2MB more L2 cache as well as the HT thing.

Ugh...guess I got a dud...I need a lot of voltage to get 8+ hours prime stable. 4.7 Ghz @ 1.425 vcore

I fold...core temps are 66-70 across the cores. Granted I don't have the bestest cooler in the world...

I may start lower that voltage until I start dropping SMP WU's. The temps don't bother me, but under load I'm very close to 1.45 volts and don't want to go over that.

As far as I've noticed (from assembling unverified data from forums) the 2500k generally needs less juice to OC and needs less fiddling than the 2600k, yes.

I don't know if my 1.33v ram helps by not putting as many volts into the IMC (although I think this effect is negligible).

I got 5.2 @ 83C @ 1.446v on my 2600K with a Dark Knight.

I hit 5.4 with HT turned off, since it outputted a lot less heat.

I believe there is some contention with the ivybridge...

I'll say now, this is by no means founded backed up info and is based on what I have heard but...

While it is a die shrink and will use the same socket, I'm not certain it will use the same chipset, so a flat upgrade on current 1155 boards may not be possible from what I have heard.

I must admit that it isn't a subject I have kept up to date on but you might want to check that out when Ivy is released just in case.

83C in a stress test isn't actually that bad. Under my watercooling system (which does include GPU), I hit 73C sustained and 76C max under Prime95 Blend 12hrs. Vcore was 1.488v idle and 1.480v Load.

There isn't an intel defined safe maximum for the Core i7 2x00k chips, but I am personally betting it is 1.55v.

Realistically, I would personally say you are fine with the temps and voltages you are seeing. Even then, you will never see temperatures close to stress testing conditions unless you are folding or doing something that really will utilize the CPU at 100% sustained.

Don't sweat the temps. I really think you seem to have a solid chip and the fact that it ran stable is all the more reason to keep it at 5.0ghz.

I agree that it is probablly the HT and the extra 2mb of cache. The 2600K's I have worked with have all needed more vcore for the same clocks, but they only need slightly more than 2500K's if I turn HT Off (thus a 2500K with 2mb extra cache)
