Need Help Overclocking 580

Ok guys I am a total noob in overclocking graphics cards. I have used msi afterburner but never really put my head into it fully... I have two superclocked gtx 580's from Evga. Both clocked at 797mhz and shader at 1594mhz... I have a ton of questions.

1. If they already run in the 85-90c at load that barely leaves room for oc?

2. I would like to get them to 850mhz. Can I do it? I have tons of fans in the case (corsair 800D)

3. What's the max safe voltage, for cpu's its 1.45, what's it for graphics cards?

4. Will I need to adjust fan speed or should I leave that on auto?

5. How do I reset them if they become unstable? If there is not enough voltage and the computer wont even turn on how will I be able to reset it...?

Please bare with me, I am new to the field of graphic card overclocking. Thank you for all your help.

Set up a custom fan profile in setings>fan>then move the square dots accordingly to how much you can handle the fan noise. Make sure you enable Auto and User Define next to the fan slider and hit apply after making your fan profile.

After this, overclock to your heart's content, but make sure it's stable
You also have to have Unlock Voltage Control ticked on to be able to change the voltage, you can find this in the settings under the general tab.

edit: I have no idea whats safe for 580s, but I would assume you'd want to stay under 1.15v. If your computer is unstable most likely it will just downclock it and say that your driver crashed. If your computer freezes and won't respond, just restart your computer. It will still turn on and just reset the clocks in AB since these cards downclock automatically when not in use. 850Mhz should be easily achieved.
