I'd go for the three 30 inchers but I have sort of a bias. I can't explain why this happens, but I can never go back to CRT's.
Sitting in front of them for hours at a time made my eyes hurt and my brain felt numb. I'd actually have to take breaks in between, which was inconvenient back in the day when I had to do projects and papers on my own computer. Maybe it was radiation poisoning?
On top of that, the weight and the heat were immense (but I'm sure it's not so different with 30" LCD's either
). Granted, I don't have as big of a desk, but I knew from my first crappy 19" Acer TN panel that I could never go back to CRT's thanks to the saved desk space. Not to mention the fact that I can sit in front of an LCD for hours straight without any issues whatsoever also significantly contributed to distaste for CRT's.
Anyway, for your situation, it would probably be a total pain to try to keep up with the graphics horsepower needed to run games at full 3x30" Surround resolutions, but it would be completely epic to be able to do that.
