What you're looking for is something like a Toshiba RD-XS52S. It is a DVD-R/RAM + HDD recorder. The only problem with most of them (including the XS52S/SU/SX) is they all have a fairly steep learning curve for all of the programs. They also lack multi-channel recording.
However, use that as a base to find similar devices that can record multi-channels (2x or more) and with a somewhat easy user interface and your pop will be good to go.
I literally just bought the RD-XS52SU (top of the line unit) at a thrift shop for 20$. It had the original purchase receipt, the remote control, instruction manual, and box with inserts. Works perfectly. If it didn't work I figured it was worth 20$ for the 160GB HDD inside.
Anyways, check around as there are tons of different models that do the same thing.
Also worth noting; anything digitally subscribed to like HBO/Cinemax/Showtime (usually the 100+ channels) will not be able to be unscrambled for recording. However all the channels below 100 will be fine as long as your provider is still sending in analog and not digital. Even then you can insert a digital box in-between for recording.
