If the money is not an issue, I should go for the 1200 power supply right anyways?
I mean, if my computer consumes 950 watts, then it will consume those 950 watts either in the 1000 power supply or the 1200 power supply right? or it will consume more in the 1200? o.o
I don't know what the cause of your issue is, but assuming your PSU is working normally and is able to deliver its 850W, then it is more than enough for your system (rather than merely "handling" it). If wattage isn't the issue, and you buy a 1200W unit, and it doesn't solve your problem, then you're out $300 and no further along solving your problem. That's all I can tell you
And I stand by my statement that a good 1000W is perfect for three GTX 580s. Although if you're getting that, I hope you're either folding or have multiple 2560x1600 monitors, otherwise it would be quite a waste in my opinion.
