With the CPU you are getting you shouldn't need a dedicated graphics card to play HD videos. I play 1920x1080 videos just fine on Intel graphics and a E8400 CPU.

With linux you can try using LMMS for audio mixing, its quite similar to fruity loops. And gimp remains my favourite photoshop alternative. You can also look at the wiki page

I think I can work with with LMMS, and Gimp looks very similar to PS. So would you guys recommend Ubuntu? Also what media players are available?

If you are looking for an "easy" transition then any of the buntu's will suffice. I prefer Kubuntu because it packages KDE for you. I'm lazy that way.

The only media player you need if you're doing HD video is Mplayer by one of it's front ends (GUIs) like SMplayer. The best quality I've seen from any video player when set up right.

VLC only if you have problems with a file.

Audacious for the best sound out of your audio files. Floating point bit depth output =

Install fglrx and get XvBA working. Provided you use a media player that supports VA-API, HD movie playback shouldn't be that much of an issue. Yeah, VDPAU is better supported with current Linux media players, but you do have options with ATI hardware.

I think I'm going to go with an Nvidia card, just to keep it on the safe side. A gt430/440 might do a good job.

I can't really see much point in going to the 440 if this is just HTPC usage going on. The 430 should be more than enough for that usage. 96 cores? I remember when that was considered high end/mid range regardless of bitwidths for the memory.
