Help me pick out hard drives, please

So, in my new build, I picked up a (poorly) refurbished V128 SSD, which I figured would be for applications, games, and os, plus I picked up a 2TB 5400RPM deskstar for storing music, movies, ISOs, etc. I've been wondering though, if I need an in between drive for applications that I don't want on the SSD.

I'm thinking I made a mistake and should have gotten a 1TB fast drive instead of the slow drive. But now that I've got that, should I also pick up a 500GB drive?

I'd say go ahead and get a 500GB drive. They've been shown to be very reliable, and its the perfect size for a games/applications drive

How much slower would my system run if I just put the OS on the hard drive? I think I'm done with refurbished drives...I'll either exchange it for a new 64gb ssd for Windows + a 500gb for games and apps or I'll just get the 500gb and add the ssd down the road.

It's definitely worth it to get a 64GB SSD; it'll make a huge difference. Its all you need for the operating system, and thats all that needs to be on it.
