"But most of that... What we want at the end of the day is that the game looks the same. The benefit you get is when you're playing a PC game you're playing this far away [demonstrates a short distance], when you're at home on your console you're usually sitting about six feet away so the game looks the same."
Bethesda is saying that from six feet away on a console, it will look the same as a short distance on a PC. For example, say you had a picture of a cat. They make the console version look a specific way at a distance of six feet, scaling all the content to a higher resolution. On a PC, you are a much shorter distance away. They use the non-scaled, original textures because you are closer and the details are more noticeable.

I have no doubt that this game will be amazing and i personally dont care about graphics too much, but on a side note, these screenshots don't look too amazing. The AA is poor and some of the textures are too. But this could totally be at low settings. Either way good lookin game

Positives:

Khajiit art style looks kickass.

So does the Orc.

The spider's self-shadowing is not bad.

The atmosphere in the Khajiit's shrine is cool.

Negatives:

LOW ASS RES TEXTURES.

LOW ASS POLY MESHES.

These better be the console friendly art asses.

Graphics are looking great regardless of how they look on consoles, at least they have told us from the off and haven't pulled a 'Crytech' on us.

I'll be playing in 1080p, I doubt console guys can say that.

2 feet away on my 23" @ 1920x1080 doesn't look much different than 10 feet away on my 55" @ 1080p.
