It's not going to load that much faster in the end after the loading screen and loading the actual game etc...
Hrmm.. then maybe I'll just dual boot Win7 and Linux on the SSD, and have both Win7 and Linux put the programs on a 1TB

If I were you

/dev/sda = 128gb ssd
/dev/sda1 = 100mb win7 reserved (i hate that)
/dev/sda2 = 90gb C: ntfs3g (90 is more than enough, put all of your stuff on D
/dev/sda3 = 38gb / (linux install ... 38gb is more than enough)

/dev/sdb = 500-1000gb hd
/dev/sdb1 = 500-1000gb D:\\ & /home/your/data -t ntfs3g

depending on how much ram you have you may also want to add a swap partition if you dont have enough, or just a swap block file on /, so subtract that space.
stable again

I'm going to have 8GB RAM.

And I have the following hard drives:

128GB SSD
500GB HDD
1TB HDD
1TB HDD

How would you set it up then?

ssd:
100 GB for windows
28 GB for linux (you will need 3 partitions here, 1 gb swap, 20 GB for / (root), the rest to /home, you can mount your other harddrives in ~ (your home folder, under like Downloads, Videos, Music, etc, so your home partition doesn't have to be very large.)

My Linux root partition, with /home elsewhere and an unusually large quantity of apps installed, is right at 20GB.

Mine is 4.1GB with temporary files and unused software cleaned out. I run it on an 8GB USB drive to save chassis space for storage drives.
