Agreed. Crysis 2 isn't very demanding, so you can get away with limited VRAM there (at least until DX11 is patched in). But other titles like Dragon Age 2, Crysis 1/Warhead etc, push my usage anywhere from, 1.3 to 1.5GB usage. I'd expect Metro and GTA to really benefit from the extra VRAM at 1600p.

I personally think, after all your worries AND the fact that you are coming from a GTX 570 which is already an impressive card...

...you would definitely need to get 2x 3GB on a GTX 580, and here is why.

Its a psychological thing:
You have already lost money if you sell the 570, unless you get some one dopey.

If you buy a single 1.5GB GTX 580, you dropping a huge chunk of change, AND you can't max every game out there at 1920x1080 with max settings AND get 60 fps+ consistently. Whats worse is, you are coming from a card that when overclocked, gets pretty close to stock GTX 580 levels. Double irritating.

If you buy twin 1.5GB GTX 580, you are dropping a huge chunk of change x2, BUT, you can max just about every game out there 1920x1080 with max settings AND get 60 fps+ in about 97% of all titles out there. The stinging of the 570 purchase won't be as bad, but it will still be there in your mind, kicking yourself in the ass about it.

If you buy a single 3GB GTX 580, you are dropping a huge chunk of change + 10%, however, AND you can't max every game out there at 2560x1600 with max settings AND get 60 fps+ consistently. Its still an upgrade over a GTX 570, as even with an overclock, the GTX 570 VRAM and GPU speed will struggle with this resolution regardless in most games. Its not enough to get the 570 purchase out of your mind, and you may have night terrors at the store, having to re-live the purchase in your dreams.

If you buy twin 3GB GTX 580s, you are dropping a huge chunk of change x2, +10% for VRAM, BUT you are able to play about 97% of all games out there @ 2560x1600 with max settings, and consistenly get 60+fps. The GTX 570 is now like an old girlfriend, your still a little bit broken up about your split up, HOWEVER, she has been replaced. Thoughts may occasionally drift to your happy times, but you are confident it was for the best to part ways.

If you buy a twin 3GB GTX 580s, you are dropping a huge chunk of change x2, +10% for VRAM, BUT you are able to play 97% of every game out there @ 2560x1600 with max settings. If you learn to overclock them about 20%, you get phenomenal performance and if you reach about 960~970 Core clock, you get about SLI 2.66 performance, not quite 3 cards, but definitely far ahead of 2. This would be the best cost effective upgrade (nVidia side) regarding what you want, and the performance you already have. Your feelings about the 570 are the same as the previous purchase, ONLY now your new girlfriend is a latina with a craving for wearing thongs that you like.

If you buy a triple 3GB GTX 580, you are dropping a huge chunk of change x3, +10% for VRAM, BUT you are able to play 99.9% of every game out there @ 2560x1600 with max settings, and more than likely most future titles, at 60fps~200fps. The 570 is like an old girlfriend, now you are dating a hot pair of 18 year olds who are twins. The sexy kind, not the conjoined kind... ...anyway you spell twins really, you have a WIN on your hands.... or WINS if you are ambitious.

If you buy quad 3GB GTX 580s, you are CallSignVega, and he doesn't play "tiny resolutions" like 2560x1600. You are able push about 100-500fps in most titles in settings that don't even exist @ 2560x1600. This is about as future proof as 3x the next gen GPUs with overclocks. Continuing with the analogy: This would be equivalent of you now officially dating twin latinas (who are both cool with it) that model for a living. Your old girlfriend (GTX 570) is working at McDonalds, is dating the manager Ray Jim Stevenson, who is 37 and has a felony record for molesting mail boxes. He likes to spend evenings putting cigarettes out on the back of her head. Did I mention the latinas beg you to play video games and love to watch scary movies? There is so much WIN in this scenario, I am litterally going blind from just imagining it.

I was young once too, and I full of hopes and dreams at one point....

You see the thing is, I can only go 10 minutes of being serious at a time. If I can't solve the problem textually in 10 minutes, comedy / silliness oozes its way in every time. It took me 11 minutes to write that, so the comedy entered at the very end... well that just looked weird so I spent another 5 minutes fixing the rest I just hope the comedy doesn't completely overshadowed the realistic experiences you might have with x y z scenario.

I just had a silly moment I guess, PLEASE don't buy video cards based on thongs and chocolate baths, definitely get some screenshots of 1600 footage, you should just talk to CallSignVega real politely, see if he will go solo screen for a bit, AND see if he will do a couple of select titles and VRAM usage. If you ask nice he may even disable SLI, but its like being Gandalf the White and being asked to use cheesy Gandalf the Homeless Gray level spells.

The 3GB is a nice choice for future, but 1.5 gigs will be more than enough. I'd go with the 3GB card if it isn't much more.

Well, we all have our own things to do. I don't really like the idea of specifically asking someone I don't know to go out of their way to help. That's why I welcomed anyone's contribution. If anyone really has a 2560x1600 monitor, and running any card in excess of 1.5gb or more, I'd really appreciate any screenshots at that resolution in the maximum settings.

Well, this whole 2560x1600 brings up the necessity for the vram. If my GTX 570 had 2GB i'm pretty sure I wouldn't be selling it and getting another. I just feel quite crappy having spent ~$450 on my card, only realising I CAN run out of VRAM at 1080p in games like Metro.

Everyone says 1.5GB should be enough, and 3GB is great for future proofing. But nobody has told me that 1280MB on my GTX 570 IS NOT ENOUGH.

Only for non-demanding titles. If I can break 1.5GB usage at 1440p using only 4xAA, 1.5 is definitely not enough for 1600p, "maxing AA whenever possible" as the OP put it.

Edit:

Speaking of which, I just booted up Metro for the first time.

Highest settings available, but only using AAA I broke 1.4GB in the first scene...

One thing you must also remember is 2560x1600 generally doesn't need nearly as much AA as 1080P to look good. 2X AA at 2560x1600 looks as good as 4x-8x AA on 1080P as by default you have 2x as many pixels making up the lines drawn.

Slightly OT, but funny nonetheless... it turns out TF2 with maxed in game settings actually eats more VRAM than Crysis 2 on extreme!
