I am looking to build a PC that would be great for gaming and have room for improvement in the future. Budget is about $1500-$1700 without speakers and monitor.

Processor: Intel Core i7-2600K Sandy Bridge 3.4GHz (Overclock it eventually)

Motherboard: ASUS P8P67 PRO (REV 3.0) LGA 1155 Intel P67 SATA 6Gb/s
USB 3.0 ATX

RAM: CORSAIR XMS 8GB (2 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600

Video :ASUS ENGTX570 DCII/2DIS/1280MD5 GeForce GTX 570 (Fermi)
1280MB

Optical: SAMSUNG CD/DVD Burner Black SATA Model SH-S223C - OEM

HD: Western Digital Caviar Black WD2002FAEX 2TB 7200 RPM SATA 6.0Gb/s

Case: COOLER MASTER Storm Scout ATX Mid Tower

CPU Cooler: Antec Kuhler H2O 620 Liquid Cooling System

you will probably need a power supply, as I didnt see one in your post

u dont need an i7 2600k for gaming,get an i5 2500k,they both performs equally in gaming,
dont get xms3 ram,get corsair vengeance ram...these rams works best with sandy bridge setup,
I see u havent included a psu,
get either one of these:
1> corsair tx750 v2
2> antec true power new tp750

The only updates I want to do to this would be add a better or second graphics card later. Should I improve anything? Also, with that in mind should I go for the i5 2500K or i7 2600k?

2500k is all you will need, save the extra money, or put it towards something else in your build. The 2600k is overkill for 99% of users.

go for i5 2500k,its a better value & almost performs like i7 2600k,
then if u want to try a single gpu....go for hd6970/gtx570,
since u wont run 2 gpu now....go for a SSD

Are you going to add more GPUs along the road? The PSU will be overkill for just a single GPU
