Should I upgrade from i7 950 to i7 2700k?

Whats a 2700k? If you mean the 2600k then no. The 950 is a very good processor and far from needing an upgrade.

I assume you mean 2600k too.

It's pretty much a sidegrade. You would be much better off buying another 6950 for crossfire or buying an SSD.

Also don't run stock! Look at the name of the forum you're posting on!

^Agreed on the bit about getting an SSD. Your HDD is probably the biggest bottleneck.
